For the Tarka (Tempering)

Step-by-Step Instructions:
Boil the daal
In a pot, add washed lentils, water, chopped onion, tomatoes, ginger garlic paste, turmeric, red chili powder, and salt. Bring to a boil over high heat.
Mash the daal
Use a wooden spoon or whisk to mash the daal to your desired consistency some people like it smooth, others like it slightly chunky. Add more water if needed.
Make the tarka
In a separate small pan, heat ghee over high heat. Add cumin seeds and let them splutter. Add sliced garlic, onion, and dried red chilies. Fry until golden and crispy about 2 minutes.
