Step-by-Step Instructions:
Boil the daal
In a pot, add drained chana daal, water, chopped onion, tomatoes, ginger garlic paste, turmeric, red chili powder, coriander powder, and salt. Bring to a boil.
Check consistency
Mash a few grains lightly with the back of a spoon to thicken the curry slightly, while keeping most of the daal intact for texture.
Make the tarka
In a separate small pan, heat ghee over high heat. Add cumin seeds, sliced garlic, onion, and dried red chilies. Fry until golden and crispy about 2 minutes. Sprinkle in garam masala.
