The Only Mutton Karahi Recipe You Will Ever Need

Let’s be honest restaurant Mutton Karahi hits different. That rich, thick gravy. Tender mutton falling off the bone. The smell of ghee and fresh ginger filling the whole house. But spending 1500–2000 rupees every time? Not ideal.

This is my go-to recipe whenever there are guests at home or we just want something special on the weekend. I have tested it many times and trust me once you make this at home, you won’t want to order from outside anymore.

Patience is the real secret ingredient!

Cook the mutton slowly first on medium flame this is what gives you that melt-in-your-mouth texture. If you rush it on high heat, the meat stays tough and chewy. Trust the process and your karahi will taste just like a restaurant actually, even better!

Ingredients:

1 kg                                      Mutton (karahi cut)
1 cup                                      Full-fat yogurt
4 medium                                       Fresh tomatoes (chopped)
½ cup                                       Fresh cream
1 tbsp                                      Ginger garlic paste
1 tsp                                    Crushed black pepper
1 tsp                                     Cumin seeds
½ tsp                                     Garam masala
¾ cup                                    Ghee or oil
2                                     Green chilies (sliced)
To taste                                     Salt
For garnish                                     Fresh coriander + ginger julienne

Step by Step Instructions:

What to do

Step 1:

Heat ghee in a karahi on medium-high flame. Add cumin seeds and let them splutter for 30 seconds. Add ginger garlic paste and stir for 2 minutes until the raw smell disappears.

Step 2:

Add mutton pieces. Cook on high flame for 10–12 minutes, stirring frequently. The water should fully evaporate and the meat should start to brown. This step builds all the deep flavour.

Step 3:

Add yogurt and salt. Mix well, cover the karahi and cook on medium flame for 25–30 minutes. Stir every 5–6 minutes. Mutton should be about 80% tender at this point.

Step 4:

Add chopped tomatoes, crushed black pepper and green chilies. Turn flame to high and bhuno (stir-fry) everything together until tomatoes break down completely and oil separates about 10 minutes.

Step 5:

Lower the flame. Add fresh cream and garam masala. Stir gently and cook for 5 more minutes. The grav will turn rich, thick and creamy.

Step 6:

Garnish with ginger julienne, fresh coriander and sliced green chilies. Serve hot straight from the karahi with naan or tawa rot

Tips & Tricks:

💡 Always use full-fat yogurt low-fat yogurt makes the gravy watery and thin.
💡 Do not skip the bhuno step after adding tomatoes. This gives the deep, rich restaurant-style colour and taste.
💡 Use fresh tomatoes only canned or packaged tomatoes completely change the taste.
💡 Add cream at the very end on low flame. Adding it on high heat will cause it to split.
💡 Serve in the same karahi the presentation does half the work!

Q: Can I use beef instead of mutton?

A. Yes! beef works well but needs longer cooking around 45–50 minutes on medium flame before adding tomatoes. Taste will be slightly different but still delicious.

Q: Is cream necessary?

A. Cream makes it restaurant-style rich and thick. You can skip it for a lighter version. The karahi will still taste great, just less creamy.

Q: Can I make this ahead of time?

A. Absolutely, Cook up to step 4 and refrigerate. When ready to serve, reheat on medium flame and add cream at the end. It actually tastes even better the next day!

Q: How to store leftovers?

A. Store in an airtight container in the fridge for up to 2 days. Reheat on low flame with a splash of water. Do not microwave it dries out the meat.

Q: What to serve with Mutton Karahi?

A. Tawa roti or naan is the classic choice. For a full meal, serve with raita, onion salad and a squeeze of lemon. Naan pairs best with the creamy gravy!
